Opinel #6 is probably the best blade I’ve got for plugs, nice thin slices. All these fancy knives & plug cutters, whilst very nice to look at, are all a bit of an overkill I think.
I have a couple of opinel knives around here somewhere. My biggest complaint is that they don't hold an edge like I prefer. I don't like to sharpen often so I like blades with steel that stays sharp for a while

 I hate dull knives and dull tools but I don't care to have to take time to sharpen all the time. So I'm... Picky

Make yourself a strop. Glue some leather to a board say 4-5” wide and 8” long. At least 50 strokes per side after sharpening and then hit 10-20 strokes per side every time you use it. It should stay pretty sharp. The key is to not let it get dull. The angle you strop at should be steeper than you sharpen at. Heck cardboard or heavy pants like Carharts are enough to strop a sharp blade.

I've pretty much settled on my kershaw 1776 "link" for cutting tobacco. Silly thing works great in my opinion because of very little belly and a very sharp edge
