I have a couple of opinel knives around here somewhere. My biggest complaint is that they don't hold an edge like I prefer. I hate dull knives and dull tools but I don't care to have to take time to sharpen all the time. So I'm... Make yourself a strop. Glue some leather to a board say 4-5” wide and 8” long. At least 50 strokes per side after sharpening and then hit 10-20 strokes per side every time you use it. It should stay pretty sharp. The key is to not let it get dull. The angle you strop at should be steeper than you sharpen at. I've pretty much settled on my kershaw 1776 "link" for cutting tobacco. Silly thing works great in my opinion because of very little belly and a very sharp edge
