I know a restaurant that serves the best sweetbreads in New Orleans. It is called Clancy's. It is an upscale neighborhood joint Uptown. It is in a house. Man, those sweetbreads are the best. They are lightly sautéed. They melt in your mouth. I am getting hungry thinking about them.

It's popular here in Southern California in tacos. Haven't tried it yet just because taco vendors can be hit & miss on specialized meats like that

I’ve had it as a cold cut and have had it in tacos many times. I’ve made it multiple times as well. Very easy! Season well and you’d just think it was some really tender pot roast. An added bonus is that it’s extremely cheap!

When I was about 5, my grandmother said "I've made you a sandwich", I opened it up to see what was on it, saw an actual tongue there and point blank refused to eat it lol! She wasn't impressed.

Tongue is ok, done right...and sliced so it doesn't look like tongue. I'll eat it if served it, but I won't go out of my way to look for it. There are too many other parts of the cow worth eating first.
