I like Arizona Gunslinger (original red version) on eggs, potatoes, etc. and Firewalker (found it in NC) on Mexican-style food. Neither are overly spicy, but both have really good flavor with the Firewalker being more citrusy.

Anthony and I are both stuck on Louisiana at this point . We don't buy anything else anymore

We have a lot of salsas around here. My wife is Mexican, and they like sauce on pretty much everything. Her favorite now is the sambal that comes in the clear plastic bottle with the green top. We also like Cholula, Huichol, Tapatio, and Yucateco bottled salsas, and I love some Tabasco on hash browns or home fries. The local latin market has some delicious traditional salsas, too.

Pulled bags of whole chiles out of the freezer last night. Today, chopped them up and added salt, vinegar and water. Put all that in a few jars for fermentation. Gonna have a jalapeño sauce and a tabasco/Thai chile sauce.

Nice! I've been wanting to make a fermented Serrano sauce for a while. I just always forget
