I like Boiled Peanuts, but not the canned or the crockpot type found in many convenience stores around the south. I like them fresh & hot from a roadside stand, or the peanuts I prepare myself in my own kitchen. I buy a 3lb bag from the produce stand and cook them with plenty of Kosher Salt and Cajun Spices in the Instant Pot. I freeze them by the serving and enjoy a bowl whenever a "hankering" hits me.
My wife's cousin boils them in a Turkey Fryer with salt and a Ham Hock. The Ham makes them way too greasy for me.

Me too. After eating a can of sardines I'm required to put the can and lid and disposable fork I used to eat them in a gallon size freezer baggie and then dispose of the whole shootin' match. I just asked Mrs. King about that sack of raw peanuts we bought. She boiled them. We loved them. We had company over and they loved them too, never having had them before. They are Dutch. We haven't had them since, the peanuts or the guests. That's the story in a nutshell.
