Never heard of this. Sounds interesting.
"Good enough" is a false idol. Beware those that preach its virtue.

I've had pickled eggs from the bar once or twice - they're okay I guess. I can't do the pig's feet, though.
My wife likes pickled pork skin (cueritos) from time to time, but what she really likes munching on when she's drinking a beer are spicy fried crickets.
Because sometimes the body just wants canned fish. 🦪

If I may, in the spirit of e.e. cummings:

I say, "yum."
Then,
I say,
"I love them."

I say,

Pickled eggs
Pickled lambs tongue
Pickled pigs feet or
'pendin' where you're from
Pickled pigs knuckle

All delicious
All nutritious
They come in jars
So ditch the dishes.

I've got a jar of pickled beets in the fridge right now that will soon give way to delicious purple pickled eggs.

Anytime we have a jar of pickles, I do the same.

Pickled garlic? Yes please.

This is the most California thing I have ever heard you say. ;)

"Instead of eating cricket legs,
You should be eating pickled eggs."

Never had one. Pickled sausage is good. Pigs feet are one of the many disgusting things that my mom ate that I don't.
God and Texas!
